Ratatouille is a classic French vegetable or meatless stew originated in the 18th century in Nice, Province. The dish was created by poor farmers as a way to sue up leftover summer vegetables. Modern recipes commonly includes tomatoes, sauteed garlic, onion, zucchini, eggplant, bell peppers fennel and basil.
