Try making this recipe called Mirepoix, a mixture of diced vegetables cooked with butter for a long time on low heat without coloring or browning. The ingredients are not sauteed or otherwise hard-cooked, because the the intention is to sweeten rather caramelize them. Mirepoix is part of a French cuisine as a flavor base for stocks, soups, stews and sauces. Carrots and celery, two of the main ingredients were offered at all three Farms2Table Farmers Markets this past weekend.
