Recipe(s) of the Week: Garlic Mashed Cauliflower

Who likes mashed potatoes? Try this healthy substitute recipe using a main ingredient-cauliflower. Yes, you read it correctly. Cauliflowers were distributed at our Farms2Table farmers markets in Apache Junction, Florence, Mesa and San Tan Valley. The only ingredients you will need are cauliflower, roasted garlic, Dijon mustard, sea salt, black pepper, butter and 20 to 30 minutes of your time. 1 cup provides only 25 calories, 77% of recommended daily intake for Vitamin C, 20% of recommended daily intake for Vitamin K and 3 grams of fiber. Consuming enough fiber may help prevent digestive conditions like constipation, diverticulitis, and inflammatory bowel disease.
