Recipe(s) of the Week: Baked Acorn Squash With Butter and Brown Sugar


Learn how to cook acorn squash with this very simple recipe! Roasted with olive oil, maple syrup, and herbs, it's a simple, delicious fall or winter side dish. It couldn’t be easier: just cut the squash in half, take out the seeds, and bake it with butter and brown sugar. Your tasty dish will be tender, buttery and sweet. So delicious. Acorn Squash was distributed at all Farms2Table Farmers Market locations this past weekend.


Acorn squash is a type of winter squash that belongs to the Cucurbitaceaeor gourd family, also including pumpkin, butternut squash and zucchini. Acorn squash have sweet, yellow-orange flesh that has a slightly nutty flavor. They’re grown in many countries throughout the world but especially popular in North America. Though they’re classified as a fruit, they’re considered a starchy vegetable and can be used similarly to other high-carb vegetables, such as potatoes, butternut squash, and sweet potatoes.


Acorn Squash are highly nutritious with a good source of vitamins B and C including magnesium and potassium.
